Deep Dish Polenta Pizza recipe
This sweet, crumbly pizza is made with a cornmeal-based crust and zesty marinara sauce. It's a healthier take on a deep-dish pizza, without all the flour and heavy cheese. Great for kids.
Ingredients List:
Polenta Crust:
2 ¼ cups water
½ teaspoon salt
½ cup instant plain polenta
Sauce:
2 (8-ounce) cans tomato paste
1 tablespoon olive oil
1 garlic clove, minced
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon sugar
Topping:
2 cups grated mozzarella cheese
½ cup grated Parmesan cheese
Directions:
1) Preheat oven to 450°F.
2) Prepare the crust: Bring water and salt to a boil in a medium pot. Add polenta, reduce to a simmer, and cook until thickened, about 5 minutes, stirring. Pour into a 9-inch pie plate; cover and chill in refrigerator 10 minutes.
3) Meanwhile, prepare the sauce: Combine all ingredients in a small bowl; whisk until well combined. Set aside.
4) Assemble the pizza: Spread sauce evenly over polenta. Cover with cheeses. Bake 10 minutes, until pizza is warm and cheese is golden.
