Mexican Pizza recipe
Combine your love of pizza and tacos with this Mexican pizza recipe. It's got a lime bean base, spiced tomato topping, and fresh cilantro to boot.
Ingredients List:
1 pound pizza dough, unbaked
1 (150-ounce) can black beans, drained
1 tablespoon lime juice
1 garlic clove, minced
1 teaspoon chili powder
½ teaspoon salt
Water, as needed
1 cup shredded Mexican blend cheese
½ cup diced tomatoes
¼ cup chopped fresh cilantro
Directions:
1) Preheat oven to 450°F.
2) Roll pizza dough out to a 12-inch circle. Set aside.
3) Place beans, lime juice, garlic, chili, and salt in a food processor; puree until smooth, adding a tablespoon or two of water if needed to thin. Spread over rolled pizza dough, leaving a ½-inch border around the edges.
4) Top with cheese; top with tomatoes. Bake 12 to 15 minutes, until crust is golden and cheese is bubbly. Garnish with cilantro and slice.
